Update on my Status –
I took about 6 weeks off from WoW, around mid-April. I started playing again around the beginning of June and have been running very little. I did a raid last week and we only downed 2 bosses, which was actually all we had planned to do, due to time constraints. I run some heroics with my 85s, especially if other guildies are on because of the new Guild Rep you can get with having 3+ guildies in a random heroic. 300,000XP and 125Gold goes into the guild each time you team up, up to 7 heroics a week.
Lately my interest has lied in running Burning Crusade content. My 70 Disc Priest is geared in many 70-level purples and I enjoy grinding rep and running these older heroics. At the same time, I have been working on The DK, using him as a tank in Northrend regular dungeons. He is currently level 74. My plan for him is to lock him at level 80, like I locked my Priest at level 70, and run Lich King content only with him. I have 4 85-level toons and dont’ really think I need any more at this point, so I though freezing these 2 toons would be a fun way to enjoy other parts of the game.
I’ll try and update posts more often, moving forward. My interest and time spent in WoW isn’t what it used to be, but I still enjoy playing sometimes.
I agree with you, freezing characters at a certain level does open up a better chance of enjoying content at that point. I never did understand the concept of power leveling or rushing to reach 85. Always thought the point was to enjoy the content and idea of the game.

Thanks for the comment, Syrenitee. Yes, I have found it quite fun to run my 70 Priest in BC Heroics and BC Raids, but I am looking forward to doing the same with my DK as a tank at 80. It gives a different venue to playing the game, rather than having multiple 85s all running the same content, or just running the same toon over and over again.
